Chef K and Dave's Voodoo BBQ Party
If you visited the Muddy York Brewing Co. Taproom this past winter and were handed a bowl of chili, soup, or stew, it was crafted with care (and our beer) by the one and only Chef Kieron Meaney – aka Chef K. This August 11th, you’ll have the opportunity to experience the full brunt of his culinary skills as he teams up with his buddy, Dave. They’ll be roasting a whole pig in a La Caja China (China Box). This is a method of roast-grilling pork traditional in Louisianna. By enclosing the pig inside a sealed metal box, the coal and smoke infuse incredible flavours into the meat in half the time it takes to cook over an open flame. That’s why it’s also known as the Cajun Microwave. Do you know what else is a Louisianan tradition? Voodoo. Voodoo is as Louisianan as apologizing unnecessarily is in Canada.
